As we did with our last Heritage month, we are posting a weekly food blog! This week I decided to try a quick and easy recipe, Aguacate Relleno de Camarones or Avocado Stuffed with Shrimp. You won’t even have to turn your oven on for this one. You just need a blender and some basic knife skills (very basic, I am not a skilled chef).
This recipe comes from My Mexico City Kitchen, a cookbook written by Chef Gabriela Cámara. She is a notable figure in the Mexican cuisine community. She pushes vegetables to the forefront with a focus on seafood.
