Toasted Coconut Cherry Cookies is a festive recipe to try just in time for the holidays! Follow along with our recipe and video tutorial below.
Toasted Coconut Cherry Cookies
1 c butter, softened
1 c sugar
2 T milk
1 t vanilla
1/2 c finely chopped pecans
1/2 c finely chopped maraschino cherries
1/4 c coconut
2 1/2 c flour
1 c coconut for rolling
Cream together butter, sugar, milk and vanilla. Add in cherries, pecans, and coconut. Gradually add the flour. If dough is too dry, add milk a tablespoon at a time until dough gathers together and is just sticky. Use a cookie scoop or two spoons to form dough into balls. Roll in coconut flakes. Flatten dough to 1/4″ thick with a fork. Bake at 350 for 10-12 minutes; bottoms will be brown and caramelized and the coconut will be toasted.
