CHICKEN FAJITAS

YIELDS: 6 SERVINGS

PREP TIME: 30 MINS

TOTAL TIME: 50 MINS

INGREDIENTS:

1/2 c. plus 1 tbsp. extra-virgin olive oil

1/4 c. lime juice, from about 3 limes

2 tsp. cumin

1/2 tsp. crushed red pepper flakes

1 lb. boneless skinless chicken breasts

Kosher salt

Freshly ground black pepper

3 bell peppers, thinly sliced

1 large onion, thinly sliced

Tortillas, for serving

DIRECTIONS:

In a large bowl, whisk together 1⁄2 cup oil, lime juice, cumin, and red pepper flakes. Season chicken with salt and pepper, then add to bowl and toss to coat. Let marinate in the fridge at least 30 minutes and up to 2 hours.

When ready to cook, heat remaining tablespoon oil in a large skillet over medium heat. Add chicken and cook until golden and cooked through, 8 minutes per side. Let rest 10 minutes, then slice into strips.

Add bell peppers and onion to skillet and cook until soft, 5 minutes. Add chicken and toss until combined. Serve with tortillas.

BAKED SPAGHETTI

YIELDS: 6 SERVINGS

PREP TIME: 15 MINS

TOTAL TIME: 1 HOUR

INGREDIENTS:

Cooking spray

16 oz. spaghetti

2 tbsp. extra-virgin olive oil

1 medium yellow onion, finely chopped

2 cloves garlic, minced

1 lb. ground beef

kosher salt

Freshly ground black pepper

1 tsp. Italian seasoning

1 (28-oz.) can crushed tomatoes

1/2 c. basil, chopped

1 c. shredded mozzarella

1/4 c. freshly grated Parmesan

Chopped fresh parsley, for garnish

DIRECTIONS:

Preheat oven to 350°. Grease a medium baking dish with cooking spray.

Cook spaghetti according to package directions until al dente, drain, and set aside.

Meanwhile, in a large skillet over medium heat, heat oil. Add onions and cook until soft and translucent, about 5 minutes. Stir in garlic and cook until fragrant, 1 minute more. Add ground beef, season with salt, pepper, and Italian seasoning, and cook until no longer pink, about 8 minutes. Drain fat in a bowl lined with paper towels and return to pan. Pour in crushed tomatoes and basil and simmer until slightly reduced, about 10 minutes. Season with more salt and pepper to taste.

Toss with spaghetti, then transfer to baking dish and top with mozzarella and Parmesan. Bake until cheese is melted and pasta is warmed through, about 20 minutes.

Garnish with parsley and serve.

CILANTRO-LIME CHICKEN

YIELDS: 4 SERVINGS

PREP TIME: 10 MINS

TOTAL TIME: 55 MINS

INGREDIENTS:

4 tbsp. extra-virgin olive oil, divided

Juice of 2 limes

1/4 c. freshly chopped cilantro

2 cloves garlic, minced

1/2 tsp. cumin

Pinch crushed red pepper flakes

4 bone-in, skin-on chicken thighs

Kosher salt

Freshly ground black pepper

Cooked white rice, for serving

DIRECTIONS:

Whisk together 2 tablespoons oil, lime juice, cilantro, garlic, cumin, and red pepper flakes. Add chicken and toss to coat. Let marinate in fridge 30 minutes and up to 2 hours.

When ready to cook, preheat oven to 425°. In a large ovenproof skillet over medium-high heat, heat remaining 2 tablespoons oil. Season chicken with salt and pepper, then add to skillet skin-side down and pour in remaining marinade. Sear until skin is golden and crispy, about 6 minutes. Flip and cook 2 minutes more.

Transfer skillet to oven and bake until chicken is cooked through, 10 to 12 minutes.

Serve over rice drizzled with pan drippings.

GARLICKY SPAGHETTI

YIELDS: 4 SERVINGS

INGREDIENTS:

6 cloves garlic, divided

1/4 c. extra-virgin olive oil, divided

1/2 c. panko bread crumbs

1/4 tsp. crushed red pepper flakes

Kosher salt

1 lb. dry spaghetti

1 tbsp. butter

3 oil-packed anchovy filets, minced (optional)

Juice and zest of 1/2 lemon

1/3 c. freshly grated Parmesan (optional)

1/3 c. freshly chopped parsley

DIRECTIONS:

Mince 3 garlic cloves. In a large skillet over medium-high heat, heat 3 tbsp olive oil. Add breadcrumbs and minced garlic and season with crushed red pepper flakes and salt. Cook until bread crumbs or golden and garlic is fragrant, about 3 minutes. Remove breadcrumbs onto a paper towel lined plate and wipe out skillet.

Thinly slice remaining 3 cloves garlic. Place a large pot of salted water over high heat and bring to a boil. Prepare spaghetti according to package instructions, reserving at least 1 cup pasta water.

Meanwhile, return skillet to medium heat and add remaining tablespoon of olive oil and butter. When butter is melted, add sliced garlic and anchovies if using. Cook until garlic is fragrant and anchovies are dissolved, about 2 minutes. Lower heat to medium-low until pasta is done cooking.

Add pasta to skillet and toss. Stir in lemon juice, lemon zest, and Parmesan if using. Add pasta water to thicken sauce as needed. Stir in parsley and 3/4 of the bread crumbs and toss. Top with remaining bread crumbs and serve immediately.

CHEESY GROUND BEEF TACOS

YIELDS: 8

INGREDIENTS:

1 large onion, chopped

1 lb. ground beef

1 (15-oz.) can fire-roasted tomatoes

1 (15-oz.) can black beans, drained and rinsed

1 tbsp. taco seasoning

kosher salt

2 c. shredded cheddar or pepper jack

8 Small flour tortillas

Sliced green onions, for serving

Sour cream, for serving

DIRECTIONS:

In a large skillet over medium-high heat, cook onion until soft, 6 minutes. Add beef and cook until no longer pink, 5 to 7 minutes more, then add tomatoes, black beans, and taco seasoning and season with salt. Stir until combined. Add cheese and stir until completely melted.

Spoon mixture into flour tortillas and fold. Garnish with green onions and serve with sour cream.

CROCK POT CHICKEN NOODLE SOUP

YIELDS: 6 – 8

PREP TIME: 10 MINS

TOTAL TIME: 6 HOURS 40 MINS

INGREDIENTS:

1 1/2 lb. boneless skinless chicken breasts

1 large onion, chopped

3 carrots, peeled and sliced into coins

2 stalks celery, sliced

4 tsp. sprigs fresh thyme

4 tsp. sprigs fresh rosemary

3 cloves garlic, minced

1 bay leaf

Kosher salt

Freshly ground black pepper

10 c. low-sodium chicken broth

8 oz. egg noodles

DIRECTIONS:

In a slow cooker, combine chicken, onion, carrots, celery, thyme, rosemary, garlic, and bay leaf and season generously with salt and pepper. Pour in broth.

Cover and cook on low, 6 to 8 hours. Remove chicken from slow cooker and shred with two forks. Discard herbs and bay leaf. Return chicken to slow cooker and add egg noodles.

Cook on low, covered, until al dente, 20 to 30 minutes.

LEMON PEPPER CHICKEN

1/2 c. all-purpose flour

1 tbsp. lemon pepper seasoning

1 tsp. kosher salt

2 lemons, divided

1 lb. boneless skinless chicken breasts, halved

2 tbsp. extra-virgin olive oil

1/2 c. Chicken broth Swanson Chicken Broth

2 tbsp. butter

2 cloves garlic, minced

Freshly chopped parsley, for garnish

DIRECTIONS:

FOR OVEN Preheat oven to 400°. In a medium bowl, whisk together flour, lemon pepper, salt, and zest of 1 lemon. Toss chicken breasts in the flour mixture until fully coated. Slice remaining lemon into thin rounds.

In a large ovenproof skillet over medium-high heat, heat oil. Add chicken in a single layer and cook until golden on bottom, about 5 minutes, then flip chicken breasts.

To skillet, add broth, butter, garlic, and lemon slices and bake until chicken is cooked through and sauce has reduced slightly, about 5 minutes.

Spoon sauce on top of chicken and garnish with parsley.

EASY TURKEY TETRAZZINI

TOTAL TIME: 1 HOUR 10 MINS

INGREDIENTS:

Cooking spray

1 lb. spaghetti

6 tbsp. butter, divided

2 cloves garlic, minced

1 lb. sliced baby bella mushrooms

1/2 c. white wine

1/4 c. all-purpose flour

2 1/2 c. low-sodium chicken broth

1 c. heavy cream

Kosher salt

Freshly ground black pepper

2 lb. leftover roast turkey, chopped (about 5 cups)

1 c. shredded white cheddar

1 c. frozen peas

1 tsp. dried oregano

1 c. panko bread crumbs

1/2 c. freshly grated Parmesan

2 tbsp. extra-virgin olive oil

DIRECTIONS:

Preheat oven to 350° and grease a 9”-x-13” baking dish with cooking spray. In a large pot of boiling salted water cook spaghetti according to package directions. Drain.

In a large skillet over medium heat, melt 2 tablespoons butter. Add garlic and cook until fragrant, 1 minute. Add mushrooms and wine and cook until most of wine is absorbed and mushrooms are soft, 5 minutes.

Add remaining 4 tablespoons butter to skillet, then whisk in flour and cook until golden, 3 minutes. Slowly add broth and cream and whisk until no lumps remain. Simmer until thickened, 5 minutes. Season with salt and pepper.

Add turkey, cheese, peas, and oregano and toss until combined. Add cooked spaghetti and toss to coat. Season with salt and pepper then transfer mixture into prepared dish.

In a medium bowl, toss to combine panko, Parmesan, and oil. Top baking dish evenly with panko mixture.

Bake until top is golden and cheese is melty, 25 minutes.

Let cool 10 minutes before serving.
